    Litti Chokha with Sattu

Litti chokha is one of Bihar's best-known traditional dishes.

Litti is a wheat-based ball filled with seasoned sattu, while chokha is a rustic preparation made from vegetables such as potato, tomato and eggplant.

    Sattu Filling for Litti

    The filling typically contains:

    Chana sattu
    Onion
    Green chilli
    Garlic
    Coriander
    Lemon juice
    Ajwain
    Cumin
    Salt
    Mustard oil

Mix the ingredients until the filling becomes aromatic and holds together.

    How to Make Litti

Prepare a wheat-flour dough and divide it into portions.

Flatten each portion and place the sattu mixture inside. Seal the dough around the filling and shape it into a ball.

Traditionally, litti is cooked over a wood or coal fire. It can also be prepared using an oven or other modern cooking methods.

    How to Make Chokha

Roast or cook potato, tomato and eggplant.

Mash them together with onion, garlic, green chilli, coriander, salt and mustard oil.

    Serving Litti Chokha

Break the cooked litti and serve it with chokha. A little ghee can be added before serving.

The combination of roasted litti, spiced sattu filling and rustic chokha creates the distinctive flavour of this classic Bihari dish.
