    Litti (Traditional Bihari Stuffed Dough Balls)
    Litti is a famous traditional dish from Bihar, made of wheat dough balls stuffed with spicy sattu filling and roasted over fire or baked. It’s usually served with chokha (mashed vegetables) and lots of ghee. Smoky, rustic, and full of flavor—litti is both comforting and highly nutritious.

    🥣 Ingredients
    For Dough:
    2 cups whole wheat flour
    2 tablespoons oil or ghee
    A pinch of salt
    Water (to knead)
    For Sattu Stuffing:
    1 cup sattu
    1 small onion (finely chopped)
    4–5 garlic cloves (minced)
    2 green chilies (finely chopped)
    2 tablespoons mustard oil
    1–2 teaspoons lemon juice or amchur
    ½ teaspoon roasted cumin powder
    Salt to taste
    Fresh coriander leaves
    For Serving:
    Ghee (lots of it 😋)

    👩‍🍳 Instructions
    Prepare Dough:
    Mix flour, salt, and oil. Add water and knead into a soft dough. Cover and rest for 20 minutes.
    Make Stuffing:
    In a bowl, mix sattu, onion, garlic, green chilies, mustard oil, lemon juice/amchur, cumin powder, salt, and coriander.
    Add a little water to make a crumbly mixture.
    Shape Litti:
    Take a dough ball and flatten it.
    Add stuffing in the center.
    Seal and shape into a round ball.
    Cook Litti:
    Traditionally roasted over coal/fire for smoky flavor 🔥
    Or bake at 180°C for 25–30 minutes
    Or cook on tawa on low flame, turning until evenly cooked
    Finish with Ghee:
    Dip hot littis in ghee or drizzle generously on top.

    🍆 Serve With (Optional but Recommended)
    Baingan (brinjal) chokha
    Aloo chokha
    Tomato chutney

    💡 Tips
    Mustard oil is key for authentic taste.
    Don’t make stuffing too wet—it should be crumbly.
    For authentic flavor, try roasting directly over flame or charcoal.
